Plant proteins in human nutrition and their evaluation with respect to age of rats

Milk casein and wheat gluten were evaluated by the contents of essential and nonessential amino acids, acid ratio (E/N), proportions of essential and limiting amino acids with respect to a reference protein (egg) and by means of calculations of potential biological value (BHp) and coefficient of compensation (K). Net protein utilization NPU and net protein ratio NPR were determined in a biological experiment with laboratory rats of the age 75 and 360 days which were administered a diet with the optimum physiological content of nutrients, and casein and gluten as a protein source for 15 days. The low E/N values for the gluten to casein ratio (0.30-0.80), low proportions of essential and limiting amino acids with respect to egg (52 per cent - 94 per cent, 18 per cent-69 per cent), lower value BHp (67-76) and low coefficient of compensation (-8 to 14), influenced negatively the NPU and NPR values in growing animals at the age of 75 days (the need of valuable mixture of amino acids to cover all requirements of proteosynthesis). At an adult age (360 days) the lower rate of proteosynthesis (the proteins are needed no more for the growth but mostly for organism maintenance and tissue regeneration) leads to the balanced NPR values and to somewhat reduced NPU values, that means deficient protein can cover sufficiently the needs of proteins for anabolic processes.
