Breeding of rye for improved baking value

The backing quality of rye depends to a great extent on the quality of the starch assessed by the falling number. Improvement of this character may be, therefore, regarded as one of the principal breeding goals. Three methods were used in breeding for high falling number: selection in the cv. Dankowskie Zlote, crossing this variety with Svaloefs Otello, remarkable in this respect, and transgressive recombination breeding. The latter proved to be the most effective and led to the formation of a new cultivar officially tested under the name of LAD 185. The breeding procedures and some results are presented showing that combining of an improved falling number with high yield is difficult but seems not impossible
