Estimation of interrelations of the features of tomato fruits in the model variety of processing tomato. Pt. 2. Interrelations of physico-mechanical features and flavour of tomato fruits

21 features were examined. Average values of the examined properties were used in a statistical analysis. There were found multiple regression equations showing "best" the dependence of flavour, resistance to injury, firmness and keeping ability of tomato fruits. The researh showed that tomato flavour depends first of all on the share of seed cavities in the fruit, and content of sugars, ative acidity, and sugars to acids ratio. Such mechanical fruit properties like resistance to injury, firmness, keeping ability mainly upon its morphological and anatomical features, and next - on the chemical composition. The most important features are: pericarp thickness, covering layer thickness in the middle part of the fruit, its shape and number of seed cavities
