Characteristics of butter starters propagated on milk with higher dry matter content

An ability of butter starters at different dry matter content to synthesize diacetyl and acetoin was investigated. Additionally, changes in dynamic viscosity were tested. Eleven different systems of butter starters were checked. The starters were propagated on milk at 9, 12 and 15 percent contents of dry matter. An increase in dry matter content in the medium coincided with higher acidity of starters, higher diacetyl and acetoin contents, and higher viscosity. The biggest increase in diacetyl content (17-23 percent) was obtained at 12 percent of dry matter in milk. Further increase in dry matter content boosted biosynthesis of diacetyl in a few cases only
