The hygroscopic properties of prunes variety "Pozegaca"

It was established that the hygroscopic moisture of the "Pozegaca" prunes is about 0.66 kg/kg. With this moisture, the prunes have maximum water activity. When the fruit moisture is 1 = 0.2, water activity is about Aw = 0.6, and such fruit cannot deteriorate microbiologically. Water binds to the solid basis of the tissue with various energies and in various ways.
