The composition and nutritive value of Orchis morio L. and Orchis latifolia L. [Orchidaceae, tubers]

The composition and nutritive value of Orchis morio L. and Orchis latifolia L. have been studied. It was established that carbohydrates represent 90% of the dry matter. 80% of the carbohydrates are divided equally between slime and starch, while almost 20% belongs to sugars and crude fibres. The protein content (2.5%) and especially the fat content (0.4%) are low when calculated in relation to the dry matter. The nutritive value of protein is low. Fifteen fatty acids were found in the lipids. Orchis morio L. and Orchis latifolia L. possess a property characteristic of material used for concentrating and stabilizing.
