Bacteriological quality control of bovine minced meat in the retail meat-market shops of Patras

The microbiological status of bovine fresh and frozen minced meat consumed in the area of Patras (north-west of Peloponese), during the years 1984-1985 was studied. 70 fresh and 30 frozen minced meat samples were examined. From the test performed it was found that: 1. All samples were free of Salmonellae and sulphur reducing clostridia. 2. A great part of them were free of bacteria-indices of enteric infection while the rest of the samples showed low and very low within acceptable unit levels. 3. Staphylococcus aureus in all samples was found to be within acceptable limits. 4. The total plate count among 90% of the samples showed acceptable numbers of bacterial load. It was composed by non pathogenic bacteria. It is concluded that the microbiological status of the minced meat samples examined is satisfactory. Suggestions are made for the improvement of the hygienic conditions of the above product.
