Investigation of the biogenic amine production of lactic acid bacteria

The biogenic amine production of 3 lactic acid bacterium strains (Lactobacillus plantarum, L. brecis var. linderi, L. fructivorans) was investigated as a function of incubation period, composition of medium, and amount of inoculum, as related to enzyme activity and biogenic amine production. The composition of the medium highly affected the synthesis of amines in relation to concentration and amine profile. Parallel with the intracellular protease activity of the microorganism, the biogenic amine concentration increased in the medium. In the presence of Lactobacillus fructivorans and L. brevis, the complementation of the medium with 0.1 % lysine and 0.1 histidine caused the increase of the corresponding concentration. Lactobacillus plantarum did not react to complementation with lysine, however, it reacted to the addition of histidine. By increasing histidine addition, the rate of histidine formation increased (0.1, 0.5, 1.0 %), too. Results prove that under favourable conditions the biogenic amine production increased in the lactic acid bacteria.
