The study was undertaken to investigate aflatoxin production by Aspergillus parasiticus NRRL 2999 in peanut seeds during one year of storage, under the effect of various degrees of temperature and moisture content. For this purpose, two samples, 13120 gr of both raw and salted-roasted peanuts were adjusted for different moisture contents of 10%, 20%, and 25%. Half of these samples were inoculated with Aspergillus parasiticus NRRL 2999, whereas the other half were maintained without inoculation. All subsamples were stored simultaneously at different temperatures of 20, 25, 30, 35 and 40 deg C for one year. The results revealed that 10% initial moisture content in the peanut kernels represents an unsafe level during storage over a wide range of temperatures of 20 to 40 deg C. Optimum conditions for aflatoxin production (B1, B2, G1, G2) in raw peanuts were found to be 30 deg C and 25% initial moisture content. Optimum conditions for maximal production of aflatoxins in salted-roasted peanuts were 25 deg C and 25% initial moisture content for G1 and G2, and 30 deg C and 25% initial moisture content for B1 and B2. Medium and low levels of aflatoxin production were obtained in samples with 20% and 25% initial moisture content, stored at 40 deg C. Very low and trace amounts of aflatoxins were produced in samples with 10% and 15% initial moisture contents
