Isolation and storage acetophilic bacteria of genus Acetobacter

Study was made of the effect of the isolation and storage conditions on retention of technological suitability by acetophilic bacteria of genus Acetobacter under laboratory conditions. Liquid, semi liquid and solid media of different composition were used. Bacteria were found to retain, under laboratory conditions, resistance to acetic acid levels occurring in the technological process, provided they were cultured in media containing acetic acid in concentrations present in the vinegar production process. Semi liquid media were shown to be most appropriate. For freeze-drying of acetophilic bacteria of genus Acetobacter it is indispensable to transfer the cells to the protective medium in such a manner as to maximally lower the acetic acid concentration in the suspension being frozen
