The investigations have shown the following: high sensoric evaluations of peach stewed fruits and nectars indicate a high technological usability of the fruits of the investigated peach varieties; the system of soil management in the peach orchard did not significantly differentiate the majority of the physico-chemical properties of the fruits; increased fertilization with N, K and Mg was associated with a higher content of ascorbic acid in peach fruits and it had a less favourable influence on the sensoric values of stewed fruits and nectars; Alar had no significant influence on the taste values of peach stewed fruits, although it insignificantly decreased their sensoric values, but it improved slightly the taste of the nectars
