Effect of low doses of gamma irradiation on organic acids of potato tuber [in Bangladesh]

Different organic acids in the cortical and medullary tissue of fresh and irradiated potato tubers were quantified. Maximum concentrations of organic acids were found in the cortical regions of fresh tubers. Citric acid (5,30 mg/g) was the major organic acid followed by oxalic acid (3.16 mg/g). Radiation treatment indicated no change in citric and succinic acid concentrations. A net synthesis of about 43% in case of oxalic acid and malic acid (I); and a net loss of about 85% in case of malic acid (II) after irradiation was observed. There was no radiation induced change in organic acid concentrations in the medullary region.
