Beverages and cheese made of soybeans were tested with lactose-sensitive patients and patients suffering from high blood cholesterol levels. The results were positive: the symptoms indicating sensitivity to lactose disappeared and side effects were not observed, the high cholesterol levels decreased to normal, but only in a few cases was the desirable level not reached. Deficiency of iron was tested with children of 4-6 years during one year. Half of the 168 children tested suffered from iron deficiency. Giving the children chocolate with increased iron content improved their physical characters (the growth of the children given chocolate increased by 9.4 o/o, while in the control group by 5.6 o/o, the body weight by 19 and 12 o/o, resp.). Fatigability decreased by 19 o/o. While the appetite of children given chocolate rich in iron increased by 25 o/o, that of the control group by 10 o/o. Chocolate fortified with iron proved advantageous for completing iron in healthy persons, and was even able to cure children suffering from iron deficiency.
