Meat quality of bulls and heifers of commercial crossbreds of the improved Slovak Spotted cattle with the Limousine breed

Chemical composition and some qualitative indices of musculus longissimus dorsi in bulls and heifers, the crossbreds of the improved Slovak Spotted cattle with the meaty Limousine breed were evaluated. Bulls were fattened to 550 kg live weight and heifers to 450 kg. No incidence of DFD meat was recorded in heifers compared to bulls. DFD syndrome was statistically confirmed in higher rigidity of cooked meat samples. Water retention and cooking losses showed tendency to the DFD syndrome. No statistical differences were confirmed. In crossbred heifers there was a higher total fat content (3.50 percent) and lower tissue protein content (0.29 percent), in crossbred bulls (1.26 percent, 0.45 percent, resp.) and in ZS bulls (1.57 percent, 0.29 percent, resp.). Statistical differences in these components between SS x Li crossbred heifers and bulls were recorded.
