Producer of milk-coagulating enzyme complex - genetic approach for investigation and stabilization

The subject of the present research is Bacillus subtilis 76, strain producer of milk-coagulating enzyme complex. The strain expresses the phenomenon of "bacterial dissociation". The process is of a great importance for applying of industrial microorganisms. In the investigations reported, the results of enzyme productivity and stability of SmR and RifR mutants are shown. Mutant forms with high productivity and increased stability are obtained and discussed.
