Effect of cultural conditions on a technological value of potatoes Bliza and Bobr varieties for French fries processing

The investigation aimed to determine the influence of cultural factors: N-fertilization and irrigation on the chemical composition of potato tubers and quality of the subsequent French fries. On the basis of the results obtained it can be concluded that the high level of N-fertilization applied during the cultivation process increased the mean weight of potato tubers, the content of total, protein, amide, amino acid nitrogen and decreased the content of starch. Irrigation applied during the cultivation process decreased the content of nitrogen compounds in the potato tubers. French fries produced from the potato tubers treated with high level of N-fertilization were of lower quality than others
