Subaleurone tissue and high protein content in barley cultivars

By means of the scanning electron microscope (SEM) the three-dimensional structure of endosperm in malting, fodder and high-protein barley cultivars was compared. Morphological differences between the kernels in all analysed cultivars except Hiproly were observed. The differentiation was expressed by a variable number of subaleurone cells: from none to large number of cells forming the subaleurone tissue. The percentage of kernels with subaleurone tissue is positively correlated with the protein content in the cultivar
