Operational research for the production of industrial glycoamylase enzyme

Development activities were aimed at the elaboration of the experimental workshop production technologies for glycoamylase of mould fungus origin. For the fermentation a genetically stabilized Aspergillus niger strain titled ATCC 22343/65 was selected. In the scale up experiments composition of the medium was optimalized by orthogonol schedules of central layout, and 12-14 GAU. cm-3 enzyme activity was reached in this way. A processing and formulation procedure was developed for the economical production of a glycoamylase enzyme meeting the industrial quality requirements and having adequate - 100 GAU. cm-3 - specific activity. Storage characteristics and stability of the product are equally excellent, and according to the evidence of the application technical tests it comes up also to the international level
