Presence of fatty acids in musculus longissimus lumborum et thoracis in lambs

Presence of fatty acids in intramuscular fat was studied in musculus longissimus lumborum et thoracis in lambs of Tsigai, Merino and Improved Valachian breeds. The amount of fatty acids was studied also in dependence on live weight in the Tsigai breed. There were determined 18 fatty acids of C8-C22 order, out of them 10 saturated, 6 monounsaturated and 2 semi-saturated (essential) acids. The differences between breeds were found in 6 acids (C8:0, C10:0, C12:0, C12:1, C14:0, C14:1, C18:1, C22:0, and C18:3), with the index of unsaturatedness of fat I1 = 1.100-1.928-1.064 in respective breeds, as well as in indices of nutritive value I2 = 0.143-0.119-0.092 and I3 = 0.288-0.230-0.184. The influence of live weight was significant in the acids C10:0, C12:0, C14:0, C18:0, C20:0 and C22:0 and with the index of unsaturatedness of fat. The Tsigai and Merino breeds had a balanced nutritive value (I2 = 0.143-0.119, I3 = 0.288-0.230). However, it was significantly higher than in the Improved Valachian breed (I2 = 0.092, I3 = 0.184). The unsaturatedness of fat was significantly the highest in the Merino breed.
