Microstructure of muscles of pigs with different qualitative characteristics

The normal muscle (musculus semimembranosus), early PSE (musculus longissinus dorsi) and later PSE (musculus longissimus dorsi) of animals, three months of age, were investigated. In PSE muscles (early and later) it comes to the disturbance in muscle fibres, through occurrence of large intracellular gaps and irregular cross section of muscle fibres. In these muscles the giant fibres were observed, two times more in early PSE muscle. In contrast to normal muscles the number of red muscle fibres (SDH) is 15 lower, i.e. the number of white fibres is for app. the same percentage higher, because the number of intermediary muscle fibres in all three muscles is similar. The differences were stated in measurements of postmortal pH changes, water binding capacity and plasticity.
