In this examination working out the method for capability and convenience of wheat varieties for starch processing included the treatment which "simulates" the industrial production of starch and gluten, the way of controling the purity of mechanically separated fractions and finally the account of relevant data. Notions like extractability of dry matter and extractability of protein are the basis for the grading model for evaluation of wheat varieties for starch processing. The method showed good reproducibility by getting basic fractions and the capability for differing the convenient wheat varieties from the others. The influence of climate factors has to be checked during next two harvests.
