The investigation of brewing yeasts: 4. Morphological and physiological characteristics of strains from culture collection under simulated production conditions

This paper is dealing with the explanation of a problem of long storage out of production conditions and the degree of its influence on morphological and physiological characteristics of brewing yeasts. Under simulated production conditions the following parameters were investigated: length and width of the cell, number of cells, biomass, carbohydrate and free amino nitrogen adoption dynamics. The obtained results indicated that the strains were significantly different in all studied characteristics.
