Interdependency between the content of nitrates and vitamin C and beta carotene in lettuce and cauliflower

According to the study of four species, i.e., eleven varieties of lettuce (produced in spring from direct sowing) and eleven varieties of cauliflower (produced from seedlings, harvested in autumn), correlation coeficient in lettuce showed that the content of NO3 depended on vitamin C in 90, and on beta carotene in 85. High dependence of NO3 content on vitamin C, i.e., beta carotene was found in cauliflower (99) as well. Accordingly, high content of NO3 in lettuce and cauliflower affect the production of higher content of vitamin C and beta carotene which, on the other hand, significantly protect human organism against possible contamination by nitrates.
