[Significance of milk proteins in the human nutrition]

Besides carbohydrates and fats, dietary proteins play an important role in human nutrition. They provide nitrogen needed by the organism for its rebuilding. The sufficient supply of essential amino acids is even more important. Milk proteins coagulate differently in the stomach depending on the treatment of the milk. This influences the availability of amino acids in the intestinal tract. Besides, the present article discusses other aspects, such as bioactive peptides, antimutagenic activity of milk proteins, their influence on calcium excretion, lipoproteins, and the development of caries and diabetes
