Internal quality of sugar beet: situation in Morocco and similarities with some other Mediterranean countries

Internal quality of Moroccan sugar beet, studied through a sampling from two beet areas, is characterized by a high level of alpha-amino nitrogen and very high sodium and invert sugar concentrations. Many similarities are observed with other Mediterranean countries. The concentration of alpha-amino nitrogen is due particulary to the excess of nitrogen fertilizer used by the farmers while the amount of invert sugar is caused by the nitrogen fertilizer and by the beet storage in the field. The high levels of sodium are in relation to different parameters and it is worth more extensive research. The effect of this internal quality on the beet processing is important and the loss must be considered.
