The aerobic microflora and lactic acid bacteria of market Ayib

Ayib samples with pH values ranging from 3.6 to 4.3 were analyzed for their aerobic bacterial flora and lactic acid bacteria. The aerobic and coliform counts did not seem to correlate with the pH value of the samples. However, samples with pH greater than 4 contained more bacterial groups than those with pH less than 4. Yeast counts reached a level of 10 7 cfu g-1 in most sampes. Coliform counts were not higher than 10 qubic g-1. The gram positive rods (66 percent) dominated the aerobic flora, Microbacterium and Brevibacterium spp. being the most abundant. Enterobacteriaceae and pseudomonas spp. constituted the bulk of the Gram negative rods (23 percent). The count of lactic acid bacteria was around 10 6 cfu g-1 and lactobacillus fermenti and L. plantarum dominated the flora (56 percent and 36 percent, respectively). Since fresh ayib usually has a pH value of 4.0 the high number and variety of lactic acid bacteria and other aerobic microorganisms was found undesirable.
