The Greek sausage industry has experienced substantial growth during the last decade. This fast growth in both supply and demand took place simultaneously with increasing competition among the firms operating in this market. These firms have increasingly applied competitive strategies to improve their position in the market and the efficiency of their operation as well. The market conditions, and the size and orientation of each firm, were the main factors determining the choice of strategies and the way they were applied by different firms. This, in association with the significant effect of the main strategies on the structure of the industry, indicated an interaction and a feedback effect between structure and market conduct. The application of the strategies (such as product development, advertising, sales promotions, enterprise differentiation and vertical integration), was associated with rapid growth, favourable conditions for competition, and non substantial increase in concentration, since both large and small firms of the industry have managed to grow
