The main objective of the present work is to analyse the structure of the cherimoya (Anona cherimola) market in Spain, emphasising on the Granada market, as an example of a producer and consumer area. The influence of some sociodemographic consumer characteristics on consumption has been also analysed. The above analysis has been based on both secundary and primary information. The latter was obtained by surveys to consumers and retailers at the Granada market. Results and general conclusions of the work show in what extent consumer behaviour influences demand, distribution and trading of anona in Granada. Some conclusions concerning marketing strategies, at both Spain and Granada levels, have finally been drawn.
