Histological and histo-chemical properties of muscle fibres as the criterium of domestic animal meat quality

The interdependence between the histochemical pattern of muscle fibres (SDH, Sudan BlackB) and M.l.dorsi properties of domestic swine (chemical composition, total pigments, instrumentally determined colour) at 2 days and at 1, 3, 6 and 12 months was investigated. The differentiation of muscle fibres (red, white, intermediary) was not affected by the age of swine, but there was a difference in muscle fibre diameter and the arrangement of muscle bundles. A similarity in the histological pattern of the samples from the swine of 1 and 3 months was found, as well as from those of 6 and 12 months. Quantitative analysis of muscle water accorded with the histological findings. The amount of total pigments was consistent with the instrumental colour parameters in some of the systems (CIE-normal, CIELAB, psychometric)
