Content of amino acids and the biological value of buckwheat grain proteins in comparison with other crops

The content of amino acids and the biological value of proteins were determined in buckwheat grain from different regions. The values measured were compared to proteins contained in cereals and legumes. The favourable content of essential amino acids and a high biological value of the proteins of all buckwheat samples evaluated are reported. The percentage of essential amino acids of buckwheat proteins is higher than in cereals (2.8-3.5% lysine) and are almost equal to the protein content in legumes (5.7-5.98% lysine). Similar positive findings were observed in the biological value of proteins counted from the index of essential amino acids (78 to 83 in comparison with egg protein). The results prove that buckwheat proteins have good dietetic properties
