Malt brewers grains is a waste product originating from beer production. Annual production in Slovakia of brewers grains amounts to approximately 200,000 tonnes. The paper deals with the chemical composition of this secondary stock. The pH value of fresh brewers grains is 6.2; it contains 68 percent water, 4.1 percent ash, 2.75 percent extracts, starch and lipids. It also comprises significant amounts of protein, fibre, and important micro- and macro-elements. Phytic acid content is significantly lower compared to its level in cereals. Fresh brewers grains does not contain any above-normative level of heavy metals
