The influence of storage time on the change of technological properties of potato tubers

The mechanical properties of potato tubers, especially resistance to mechanical damage, have a significant effect on loss levels during harvesting and processing. In this context, the Department of Machinery and Production Systems of the Slovak Agricultural University in Nitra researched the technological properties affecting mechanical damage of tubers. The density of tubers, shape coefficient and the air force necessary for penetrating part of a tuber at quasi-static loading were determined. Changes in the characteristics were studied in the dependence on storage time of potato tubers. Four potato varieties (Albina, Lomnica, Rosara and Asterix) were used for testing. It was concluded that there were no significant changes in the density and axial compression tests during full time of storage. Moderate changes were observed in the dimension characteristics, or shape coefficient, whose value slightly increased
