A study on growth, development, biochemical changes and harvesting indices of mango (Mangifera indica L.) cv. Kaew Juk, grown at Kamphaengsaen, Nakhon Pathom Province during 1990-1991 was carried out. The growth patterns of seeds and fruits were characterized by simple sigmoid curve. The hardening of endocarp started at the 9th week after fruit set. As the maturity approached, soluble solids, total sugars, starch, dry weight and beta-carotene content increased, while titratable acidity and flesh firmness decreased. The fruit took 14-16 weeks from fruit set to maturity. The number of days from fruit set, specific gravity and heat unit can be reliably used as harvesting index. Fully matured fruits stored 9 and 12 deg C (93-96 % RH) had the longest storage life of 24 days without chilling injury (CI) at their peel and pulp. But the cotyledons and seed coats of mango seed became dark and brown after 9 day of storing at low temperature. Mangoes were treated with 200 ppm C2H4 and 10 and 20 g CaC2/kg of fruits for 24 and 48 hours, they were ripened earlier than the control fruits for 3-4 days. The quality of ripened fruits were not different between C2H4 and CaC2 treatments.
