Quality control of raw material and final products of tomato puree by Howard mold count methods

Mould counting in tomato puree and quality control of final products and raw material are completely developed by Howard mould count methods. We analyzed various samples of tomato puree from industry and retail trade. Samples are prepared with refraction index of 1.3446 and moulds are count in Howard cell. For tomato puree, Yugoslav Federal regulations mould tolerance are 50. The analysis showed that samples had 4 to 80 positive mould fields, which devour significantly from Yugoslav Federal regulations. Due to relation between percentage by weight of rot and mould count, final results indicate that raw tomato contains from 0.1 to 15 rot tomato.
