This paper discusses the issues with respect to both the determination of the production and processing capacities and fruit production and viticulture output needs. Special attention was focused on market requirements with respect to the final produce and development possibilities in primary production in order to achieve an efficient utilization of the processing capacities during a given period. Thus the available natural resources (soil, storage, processing and other capacities) need to be taken into account. Different methods and procedures were used to determine the production and processing capacities in fruit production and viticulture with special emphasis on the balance method. In order to use this method it was of major importance to define factors such as land area, number of trunks and grapevine plants as well as to define expected yield on the given land area with application of relevant agricultural measures and labour processes. Besides, the linear programming method was also used to determine the production and processing capacities including production output.
