The optimization of sugar production and production alternatives for sugar beet

Sugar content is one of the key features with respect to yield in sugar beet crops. The enzymes involved in sucrose production as well as in many cases the corresponding genes have been cloned from various plants. Transgenic technology allows the modulation of the expression of these genes. Results obtained using potato tuber as a model will be presented. Fructans are a class of carbohydrates occurring in many plants. They are of interest because of their application in both food and non-food industries. Results will be presented describing the efficient production of fructans using both bacteria and plant derived genes.
