Changes of quality indices of common carp during overwintering in a storage basin

Dynamics of quality of common carp during winter storage in a concrete basin was analysed. Dressing percentage, dry matter, protein and fat content were followed during the period October-April. Initial stocking density was 9 kg/m sup(3). 30 fish were analysed every month. Average dressing percentage was 64.5 per cent, protein content 17,9 per cent, fat content 9.5 per cent. No changes of quality were detected before April when the dry matter and fat content decreased on the average 2 per cent. Surprisingly in April the dressing percentage was even higher than in previous months. Mature males had mean GSI 3 per cent and this caused on the average 1.6 per cent lower dressing percentage of males while the females were still immature
