The interaction between the chemical composition of maize kernels harvested at different maturity levels of the host and the growth of Aspergillus flavus and aflatoxin content

An experiment was carried out to study the relationship between the chemical composition of maize grains (c.v. Arjuna), harvested at five levels of maturity, with the growth of A. flavus and its aflatoxin concentration. Maize ears were harvested at 82, 89, 96, 103 and 110 days after planting, the moisture and chemical contents determined and used as the growth media for A. flavus. The fungal growth was rated using the Hitungan-Cawan (HC) method and the aflatoxin concentration using the thin layer chromatography (TLC). The chemical composition of the maize grain was correlated with A. flavus growth and aflatoxin concentration. Reducing sugars, amylase and lipid contents were parts of the maize kernel chemical composition that influenced the growth A. flavus and aflatoxin concentrations, however non-reducing sugars, total sugar and protein did not influence the fungal growth and aflatoxin content. The number of fungal colonies influenced B/G1 and B2/G2 aflatoxin concentrations, the fungal growth and aflatoxin contents were the lowest on the growth media prepared from maize grains harvested early
