In the field experiment two kale cultivars were sown in terms: 15 May, 15 June, 15 July and planted 35 days later. Total protein content and amino acid composition were analysed in leaf samples collected in two terms: late autumn (15 October) and winter (15 February). It can be concluded that proline and glutamine were dominant amino acids in kale protein in all experimental treatments. An increase of protein content was not affected by kale cultivar, but by the later harvesting date which, however, decreased a content of essential amino acids. The best protein quality was assured by early sowing term of kale
