Content of muscle glycogen and meat quality in socially non-stabilized bulls with respect to transport before slaughter

The slaughter bulls of Holstein Pied breed were divided into two groups in accordance with the type of stress. Group A (n = 16) was loaded into a lorry and transported 35 km to an abattoir. Group B (n = 13) passed from the fattening house to the abattoir (without transport) to a distance of 100 m. The animals in both groups were stabled in tying stall, i.e. the bulls were not socially stabilized. Muscle sample was taken from musculus semitendinosus by spring biopsy immediately before the slaughter. The glycogen content was determined in them. The meat quality was determined in musculus longissimus thoracis et lumborum 48 hours (pH, color and water holding capacity) and 7 days post mortem (cooking losses, shear force value). The pre-slaughter manipulation caused significant exhaustion of muscle glycogen in animals of both groups, the values immediately before slaughter were 12.86 micromol./g in group A and 29.38 micromol./g in group B. Significantly lower value (P 0.01) was noticed in animals which were exposed also to the transport stress. The exhaustion of the muscle glycogen influenced subsequently the final pH value (a - 6.86, B - 6.84) and creation of DFD-meat which was determined in all animals of both groups. Differences between groups were not found in futher studied qualitative parameters either
