Development of cassava for food and feed: Cassava cracker

Flour crackers are snack food product that not be expensived. Cassava starch can be used to replace other flour as raw material. The cost of cassava starch is less than the other flours. Traditional cracker ingradient have been set by different ratio of spices, and also with the different volume of water to make dough. The method of gelatinization have been recorded. Deep fired cracker at 205 deg C, 6-7 minute for sensory evaluation and acceptability.
