Special types of breads and baked goods - production and quality, part 1: Special types of bread and baked goods with nonbread cereals

Special types of bread and baked goods are separate and major group of the bakery products. Within this group around the world, large number of different products defined in legislative regulations are produced. According to Yugoslav regulations a small number of products are included within the group of special types of bread and baked goods. On the other side, new special types of bakery products not defined in Yugoslav regulations, are present at the market. Within this paper special types of bread and baked goods produced with addition of nonbread cereals are included. Along, the definitions for these types of products given in regulations in Germany, as the country with wide assortment of bakery products, are presented.
