Antagonism of lactic acid bacteria towards E. coli [Escherichia coli]

This work carried out to study the inhibitory effects of different commercially available starter cultures (used in dairy industry) against Escherichia coli. The sterile milk was contaminated with 1 and 1-10 c.f.u. Escherichia coli / ml, and then inoculated with tested cultures. The fermentation was carried out at optimal temperature and within the recommended time. The process was controlled by monitoring the changes of pH values. The replicate tubes of brilliant green lactosa bile (BGLB) broth was inoculated with decimal dilution of contaminated milk and incubated. The positive samples in dilution series (gas producing) indicated the titre of Escherichia coli. According to the results, the tested cultures did not exibit the inhibitory effects against Escherichia coli.
