Estimation of carcass composition of slaughter cattle by x-ray

X-ray computer tomography presents a new opportunity for animal breeders to determine the body composition and slaughter value of living farm animals used for meat production. Use of this method is restricted in the case of cattle breeders, since the CT instruments available are suitable only up to maximum body weight of 150 kg. According to relevant literature, the composition of a carcass can be estimated by rib samples. Use of rib cuts would provide opportunity for CT estimation. Thus, significant correlation was calculated between the ratios for the meat, bone and fat in the rib cut and the whole carcass in this study (r=0.73, 0.54 and 0.86, respectively).
