Content of omega-fatty acids in egg yolk of hens

The aim of the research was to find the possibility of increasing omega-fatty acid content in hens' egg yolk. The role of fatty acids in human organism, particularly in preventing heart diseases is explained. One of the possibilities to increase omega-fatty acid level in human diet is to increase the fatty acid level in poultry eggs. In the experiments conducted in Estonia in 1998 the enrichment of hens' egg yolk by the flaxseed-oil supplement in hens' feed was investigated. The investigation results showed that the supplement of flaxseed-oil in the hens' feed increased the content of fatty acids in egg yolk.
