Colostrum - a new challenge to dairy technology

Many functional dairy products have been launched to the market during the last years. Colostrum can be used as a raw material for such products. The aim of the present investigation was to determine the composition of the colostrum of Estonian dairy herd. The total solids, protein, lactose, pH and titratable acidity were measured. Colustrum was collected from first three milking and from 11 milking representing the control sample. The first milking contained 20.9 plus minus 6.2 % of total solids, including protein 10.5 plus minus 3.6 %, fat 4.6 plus minus 1.3 % and lactose 3.9 plus minus 0.12 %. The lactose content was higher compared to previous investigation (2.4 %). The average of the first milking titratable acidity was 39.8 T and pH 6.4. The colostrum had the best quality (high protein content) during the two first milking).
