Influence of season and subsequent years of microbiological evaluation of milk on its quality

In over 21000 of milk samples, originated from private farms, equipped with milking machines and coolers, a content of fat, protein and bacteria count, presence of undersired chemicals like antibiotics, somatic cells count (8990 samples) and freezing point (7672 samples) were evaluated. The effects of collecting center, year and season were taken into consideration in statistical analysis model. Milk characterized itself by high content of fat (4 percent) and protein (3.18 percent), moderate bacteria count (190000 in 1 ml) and somatic cells (318000 in 1 ml). The influence of the season and year was a factor differentiating milk in highly significant manner. In the summer period it contained less fat, protein, bacteria and somatic cells. Decreasing of bacteria count and increasing of somatic cells count were observed in subsequent years. The presence of undesired chemicals in milk was noted in 4.09 percent of samples, but a decreasing tendence, until complete disappearing, was observed in second period of the research
