Effect of mechanical damage on some nutritional constituents in cabbage as related to applied nitrogen fertilizers and short-term storage

Wounding (shredding and bruising) of winter cabbage heads followed by their short-term storage (20 and 5 deg C) were tested. In the first year a gradual increase in the ascorbic level was found in shredded cabbage, while the following year the increase concerned only the samples treated with ammonium nitrate. An increase in thiocyanates within the injured tissue was noted at both storage temperatures, especially in the case of ammonium nitrate application. Artificially evoked bruishing of the heads induced less distinct changes in nutritional compounds, although an effect of wounding on ascorbic acid reduction in stored cabbage and thiocyanates content was found. A higer sensivity to mechanical damage was noted in plants treated with ammonium nitrate in comparison with urea
