[The electronic nose and the sensory analysis of virgin olive oils]

anglais. The aim of this work was to evaluate, by an electronic nose, the aromatic characteristics of virgin olive oils. The necessary methods to virgin olive oils aroma electronic detection were developed, discrimination tests were made and it was tried to train the equipment in order to identify the positive attributes and defects of this product. The experiences showed that the the electronic nose seemed to be, together with the panel, a potential instrument to the sensory evaluation of virgin olive oils, having identified some aromas and distinguished not only between good and bad olive oils but also oils obtained from different olive varieties

Com este fim, foram desenvolvidos os metodos necessarios a deteccao electronica do aroma dos azeites virgens, realizados testes de discriminacao e tentativas de treino do equipamento para que fosse capaz de identificar os atributos positivos e os defeitos deste produto. Nos ensaios realizados, o nariz electronico mostrou ser, em complementaridade com o painel, um potencial instrumento na avaliacao sensorial dos azeites virgens, tendo identificado alguns aromas e distinguido azeites bons de azeites com defeito e azeites provenientes de diferentes variedades de azeitona
