Modern aspect of meat products quality

The common phrase, used worldwide, for meat products that meet the requirements regarding human health is "healthy food" or light segment. Following these requirements, imposed by experts of "healthy food" production, meat products are expected to contain high quantity of proteins, vitamins and minerals and low quantity of fats, sodium and cholesterol. In this paper, we summarized the facts from different sources which show what have been done so far in the world in order to make meat products an more important segment in human consumption. We have also mentioned authors ideas on which products can be successfully realized in Yugoslav meat industry.
